Friendship Bread
2 cups softened butter
4 cups white sugar
2 eggs
4 cups flour
2 teaspoons baking soda
2 cups buttermilk (or 2 cups milk plus
2 Tbs. lemon juice)
2/3 cups white sugar mixed with
2 tsp. cinnamon
Mix butter, sugar and eggs. Stir in flour, baking soda, and buttermilk. Grease two bread pans or 5 small (3” x 2”) cake pans. Sprinkle 1/4 cup cinnamon-sugar evenly over the pans. Divide the remaining batter between the pans then top with the remaining cinnamon-sugar . Use a butter knife to swirl the cinnamon into the batter. Bake at 350°. for one hour (bread pans) or 35 minutes (cake pans) or until a toothpick comes out clean. Cool before eating.
