Potato and Onion Soup
2 medium potatoes
2 onions
1 carrot
½ cup barley or rice
6 cups water
seasonings
Peel and chop potatoes, onions, and carrots. Put water, barley or rice and vegetables into a pan. Cover and bring to a boil, reduce heat, and simmer until barley is cooked. Season to taste. Garnish with parsley.
