Mom's Apple-Nut Muffins

Mom’s Apple-Nut Muffins


1 egg

3.4 cup of milk

½ cup of oil

1 apple pared and grated

2 cups of flour

1/3 cup brown sugar

3 tsp. baking power

1 tsp. salt

½ tsp. cinnamon


Heat oven to 400°. Grease bottom of muffin cups. Beat egg, stir in milk, and oil. Add pared and grated apple and ½ tsp of cinnamon. Stir in remaining ingredients all at once. Stir 14 times just until flour is moistened. (batter will be lumpy). Fill muffin cups about ¾ full. Sprinkle top with ¼-cup brown sugar, ¼-cup chopped nuts, and ½-tsp. cinnamon. Bake until golden brown, about 20 minutes. Immediately remove from pan. .


My granddaughter did not want nuts so I made a pan with nuts and one without. The picture is of the ones with nuts, but I mixed them with the batter.
