Irish Potato Soup
2 Tbs. butter
2 medium onions, thinly sliced
3 large potatoes, peeled and sliced
5 cups milk
1 clove garlic crushed
½ tsp.. salt
½ cup evaporated milk
chopped parsley
Melt butter in a large pan, stir in onions and potatoes. Cover and cook for 10 minutes or until vegetables are tender-crisp. Add milk, garlic, and salt. Simmer for half hour. In bottom of each soup bowl put tablespoon of evaporated milk and sprinkle of parsley. Pour hot soup on top and stir once.
