3 cans Great Northern Beans
½ pound cooked ham, diced
1 small onion
2 carrots
2 cups chicken stock
1 tsp. parsley
½ cup brown sugar
salt & pepper to taste
1/8 tsp. cayenne pepper
1 tsp. garlic
¼ tsp. thyme
3 Tbs. Olive Oil
Using a Dutch oven, add olive oil, onion, and carrots (cook 5 minutes). Sauté the garlic (30 seconds).. Add ham and cook for two minutes. Add chicken stock, simmer for a minute. Add drained and rinsed beans, brown sugar, salt, pepper, thyme, and cayenne pepper. Simmer for a few minutes to mix flavors. Serve warm.
