Family Favorite - Chicken & Ritz
4 chicken breasts
1 16 oz. carton sour cream
2 cans Cream of Chicken Soup
40 Ritz Crackers
¼ cup margarine
2 Tbs. poppy seeds
1 cup rice - cooked according to directions on the package
Cook chicken breasts. Cut into 1-inch pieces and place in bottom of 9 x 11 inch casserole dish. Mix 16 ounce carton of sour cream and 2 cans of Cream of Chicken soup. Place on top of the chicken breasts. Crumble Ritz Crackers with the margarine. Add poppy seeds to crumbled crackers. Sprinkle crumb mixture on top of soup and chicken. Bake 350° oven for 30 minutes. Serve over cooked rice. Serves 8 - 10 people.
