Brown Sugar Glazed Salmon
2 pounds Salmon
2 tablespoons olive oil
¼ cup brown sugar
2 tablespoons melted butter
juice of 1 lemon
salt and pepper to taste
Line baking sheet with aluminum foil. Place Salmon inside with skin side down. Sprinkle with salt and pepper. Fold up aluminum foil around the salmon. Wisk together in a medium bowl olive oil, brown sugar, and half the lemon juice. Pour glaze over the Salmon and then spread the butter over the fish. Top with aluminum foil and seal. Bake for 20-25 minutes. Do not overcook. Uncover the foil and baste with more glaze and butter. Broil for 2 – 3 minutes or until brown and caramelized. Delicious – Serves 4.
